This hands-on class starts in the lively Xizhou morning market, where your Bai host helps you pick fresh local ingredients and explains the region's herbs and specialties. Then it's into a traditional courtyard kitchen to cook 3-4 Bai classics — pan-fried rushan 'fan cheese', Xizhou baba flatbread and an Erhai-style dish — before sitting down to eat everything together.
